Pancakes

Recipe from my friend from one forum from the States:

2 cups All purpose Flour + 2 tbl corn starch
2 eggs separated
1 tsp baking powder + 1 tsp baking soda
1 tbl white sugar
1 tbl veg oil
2 cup butter milk or (1 1/2 cup yogurt +1/2 cup milk) the batter should be thick but fluid if it is a little thick add a little milk. Don't over beat or they will not be light and airy!!!

Sift together flour,cornstarch,soda and Baking powder. In a large mixing bowl whip egg yokes, sugar, oil, and butter milk till well combined about 1 min. Whip egg whites in a clean separate bowl to stiff peaks,set aside. Add the wet ingredients into the dry. Don't over mix!!! The batter will be lumpy, that is ok the lumps will cook out. Let the batter sit 15 min while you pre-heat the griddle. You want it at about 350 deg F . Now fold the egg whites into the rested batter, lightly grease the surface of the griddle. {oil is better than butter} Use 1/3 cup measure and drop on to griddle. Cook till the edges are just set and bubbles form and burst in the center then flip cook reverse side. The cake should be a nice golden brown.
